  • Binging with Babish: Pasta Aglio e Olio from Chef

    3:32

What dish can make any man or woman ache for the touch of Jon Favreau? Pasta Aglio e Olio is the dreamy midnight snack that lives up to its porny portrayal in the foodie-comedy-drama Chef. Recipe below!

    Recipe:

    RECIPE

    *Ingredients*

1/2 head garlic, separated and peeled

    1 bunch parsley, rinsed

1/2 cup good quality olive oil

    1 tsp red pepper flakes

    1/2 lb dry linguine

    1/2 lemon

    *Method*

Heavily salt a large pot of water, and bring to a boil. Cook pasta to al dente while completing the steps below.

Slice the garlic cloves thinly, and set aside. Pick the parsley leaves from their stems, and finely chop. Add olive oil to a large sauté pan, and heat over medium flame until shimmering. Add sliced garlic, stirring constantly, until garlic is barely toasted. Add the red pepper flake and remove from heat.

Add the pasta, drained, with about 1/4 cup reserved pasta cooking water. Add lemon juice and parsley, and toss to combine. Season for salt and pepper, and serve.

In the final season of Broad City, when negotiating the terms of their relationship, Ilana and Lincoln describe a bowl of pasta in particularly explicit terms. As soon as I heard it, I knew I had to make it on the show. Okay yes, this was pretty much just an excuse for me to make some truffle pasta. And to use my giant wheel of parmesan for something other than snacking.

  • Binging with Babish: Game of Thrones

    8:59

This weekend we're welcoming back the show that has the monopoly on lurid violence, epic battles, and wholly unnecessary nudity: Game of Thrones. George R.R. Martin's ability to describe the crunching of a skull is rivaled only by his ability to describe the crunching of a pastry, so it's only fitting that this sexy saga is home to some serious food porn. And revenge porn. And porn porn. I'm a main character in this show, so my life is decidedly in danger this week.

**I can't believe I should have to mention this, but do not actually ingest strychnine. It's poison. It was a joke. Don't be stupid.**

Music: Cream on Chrome by Ratatat

    RECIPE
    ---

    *Ingredients*
    -3 cloves garlic, cut paper-thin
-3 small onions (keyword: small) chopped
-1 lb each sweet and spicy italian sausage
    -1 beef shank
-1lb veal neck bones w/ meat attached
    -1 glug red wine
-3 cans DOP San Marzano tomatoes
    -1 tbsp tomato paste
    -2 large stems fresh basil
-1 large carrot, peeled and cut into big chunks
    -1lb meatballs
-Olive oil or butter for finishing (optional)
    -Parmesan cheese (not optional)

    *Method*

In a large stock pot, brown the sausage, beef, and veal in batches until well browned and fond has formed on the bottom of the pot. Add onions, sauté until translucent, add tomato paste and garlic and sauté until fragrant. Deglaze with wine, scraping up all the good stuff on the bottom of the pot. Add tomatoes, crushing with a spoon (or processing with a food mill if desired), and return meats to the pot. Add basil and carrot, and bring to a bare simmer. Let sauce simmer for hours, stirring and scraping the bottom occasionally (don't let anything stick - it will scorch and ruin your sauce). Add meatballs during the final hour of cooking, and simmer until desired consistency is reached.

Remove carrots and beef/veal bones - add a spoonful of sauce to coat some freshly-cooked pasta (preferably something ridged so it holds onto lots of sauce), and serve with meat and extra gravy. Top with parmesan. Eat.

    6:04

The chicken/meatball/eggplant/veal parm hero - not only is it my death row meal, it's the object of affection for many of our favorite fictional characters. Spongebob buys an entire house made of parm hero, Joey Tribbiani nearly takes a bullet for one, Agent Harris feeds one directly to a parasite plaguing his body. Go way over the line for this Italian-American classic today - and yes, in this context, it's spelled 'heros'. I think.

    4:51

Fun fact: Chilean sea bass was nearly fished into extinction after its mere mention in Jurassic Park! That's actually not a very fun fact. That's kinda messed up. While still overfished, it can be acquired legally - while fetching a price of $30/lb. A delicious (and less expensive) alternative is black cod!

  • Binging with Babish: Big Kahuna Burger from Pulp Fiction

    2:33

The Big Kahuna Burger is one of the countless themes running throughout numerous Tarantino films, almost as prevalent as revenge, lurid violence, and racial epithets. After this double-stacked caramelized-pineapple-and-onion Hawaiian smash-burger, you're gonna need a Red Apple cigarette.

Music: Cream on Chrome by Ratatat

    Recipe:

    Watch in Spanish here:

    RECIPE
(smashburger method courtesy of Serious Eats)
    --

    *Ingredients*

-1 red onion, sliced into rings
    -2 tbsp butter, divided
    -3 thin pineapple slices
    -1 tbsp vegetable oil
-4 oz ground beef, divided into two balls
    -2 slices monterey jack cheese
-King's Hawaiian roll, toasted in butter
    -1/2tbsp ketchup
    -1/2tbsp teriyaki sauce

    *Method*

In a sauté pan, heat 1 tbsp butter until foaming, and add red onion. Cook slowly, over low heat, tossing constantly, until soft and caramelized. Set aside.

Wipe out sauté pan, and heat remaining tablespoon of butter until sizzling. Add pineapple slices, and sauté until lightly charred on both sides. Set aside.

In a large cast iron skillet, heat vegetable oil over high heat, until smoking. Place beef balls several inches apart in skillet, and smash down using a large, flat spatula (if you've only got a little wimpy spatula like I did, use a rolling pin or the handle of a wooden spoon to really smash the burgers down). Cook for approx. 60 seconds, until the bottom is charred and crispy. Flip, and immediately top with cheese. Remove from heat, but leave burgers in the pan while you assemble, to make the cheese melt completely. Dress bun with ketchup and teriyaki sauce, top with burgers, caramelized onions, and pineapple. Enjoy.

Joe Pantoliano has portrayed a bevy of characters with questionable hairpieces, questionable facial hair, and a complete lack of morality or empathy. This week's villainous snack is no exception - Cypher is pure Pantoliano, and only he could make talking with your mouth full still seem appetizing. Scheme along with your favorite shady compatriot as we enjoy this week's less flavorful, but nevertheless indulgent steakhouse classic.

    RECIPE

    --

    *Ingredients*

-3oz ancho chiles, seeded and torn into 1 pieces
-1oz cascabel chiles, seeded and torn into 1 pieces
    -1 tbsp unsweetened cocoa
    -3 tbsp corn flour
    -1 tbsp freshly-ground cumin
    -1 tbsp dried oregano
-32oz carton of chicken stock, divided
    -2 jalapeños, minced
    -1/2 habanero, seeded and minced
-6 roma tomatoes, cored and chopped
    -2 tbsp olive oil, divided
-3 lbs chuck steak, trimmed of fat/gristle, cut into cubes and chopped
    -1 large onion, diced
    -4 cloves garlic, pressed
    -12oz light lager
-6oz red kidney beans, soaked until tender
    -2 tbsp brown sugar

    *Method*

In a large sauté pan, heat dried chile pieces over medium-low heat until toasted and *barely* smoking - do not allow to smoke. Once toasted, place in the bowl of a food processor. Process for 2-3 minutes, until peppers are reduced to a fine powder. Add cocoa, corn flour, cumin, and oregano - pulse to combine. While machine runs, add 3/4 cup of chicken stock, until a paste is formed. Scrape into a bowl and set aside.

Heat 1 tbsp olive oil in a large pot until near-smoking. In batches, brown beef on all sides, being careful not to over-crowd the pot. Once all beef has browned, and fond has formed on the bottom of the pot, add remaining oil, and sauté onions and peppers until sweating. Deglaze with beer, and scrape the bottom of the pot. Add remaining ingredients, stir well, and place in a 300F oven, lid slightly ajar. Stir occasionally to prevent scorching, and braise for 2-3 hours, until beef is tender. Season with salt and pepper, and serve with cheese and cornbread.
